Valentine’s Day is almost here. What is there not to love about a holiday dedicated to hearts, roses, red, pink, cupcakes, and chocolate? Amazing day, really. These are delicious, nut free and easier to make than they seem. As opposed to frying the pancakes, they’re baked. The strawberries make them sweeter and the wine helps the ingredients stand up to coconut flour.
Ingredients: 2 Tbsp Paleo Butter, 2 Tbsp red wine (don’t use cooking wine), 4-5 chopped up strawberries, 1 Tbsp coconut oil, 2 tsp vanilla extract, 1 tsp almond extract, 2 eggs, 1/2 tsp baking soda, 1/4 cup honey, 1 cup coconut flour; Garnish: melted chocolate instead of syrup, coconut
Preheat the oven to 350. In a blender, combine all of the ingredients except for the coconut flour. Add in the coconut flour, 1/4 cup at a time. Roll out into a flat sheet, and shape with cookie cutters. Bake for roughly 17 minutes. Garnish with melted chocolate, coconut and more strawberries.
